I made these white chocolate rainbow rice krispies with my girls this weekend. These are a colorful, fun and fruity twist on the original. Also seriously addicting. Watch out!
I had originally made these last summer for my daughters unicorn themed birthday. Rainbows and unicorns go together...coincidentally rainbows and leprechauns also do..making these treats perfect for St Patricks day. Yay!
Simple and so easy to make. Top these with melted white chocolate and sprinkle with edible gold stars. Presentation and taste on point.
White Chocolate Rainbow Rice Krispies
Makes 1 9x13 pan
4 ¼ cups fruity pebbles
2 ¼ cups rice krispies
12 oz mini marshmallows, about 5 ½ cups
4 tablespoons butter
¼ cup white chocolate chips
1 tsp vanilla
White chocolate Topping
1 cup white chocolate chips
2 tablespoons heavy cream
In a large bowl mix together fruity pebbles and rice krispies. Set aside.
In a large saucepan over low heat combine the remaining ingredients together. Stirring until melted and smooth.
Remove from heat, add in cereal and mix well.
Transfer to a buttered 9 x 13 pan, pressing down with a spatula.
In the microwave, melt the chocolate chips and heavy cream, in 20-second increments stirring after each until completely smooth.
Top the warm rice krispies with the chocolate, spreading evenly with a spatula. Top with edible gold stars. Enjoy!
