Soft, buttery, almond flavored shortbread cookies sandwiched between sweet jam and dusted with powdered sugar..
The most classic of Christmas cookies!
These cookies have always held a soft spot in my heart..so festive and fun! I just love the dusting of powdered sugar, makes me think of soft, freshly fallen snow.
and that center..my favorite part!
Almond Linzer Cookies
Makes 18 cookies
¼ cup almonds, pulsed
1 ¾ cup flour
1/8 tsp baking powder
¼ tsp kosher salt
10 tablespoons softened butter
¾ cup sugar
¼ tsp almond extract
Preheat the oven to 350. In a food processor, pulse almonds until fine. Set aside. In a medium bowl combine all dry ingredients. Set aside. In an electric mixer, fitted with the whisk attachment, cream the butter, sugar and almond extract. Add the egg and mix well. Add dry ingredients and mix well. On a floured surface, roll dough out to ¼ inch thickness. Cut dough using a 2 inch fluted cookie cutter. Repeat until all the dough is used. Cut small star shapes into the center of half of the cookies. Arrange the cookies 2 inches apart on a baking pan lined with parchment paper. Bake cookies at 350 for 11-12 minutes until golden on top. Remove and let cool. Using a fine mesh sieve, sprinkle powdered sugar on the tops of cookies with stars cut out. Assemble cookies. Spread about 1 -2 tsp. of jam on the flat surface of the cookies without shapes, top with a star shape cookie. Repeat process with the rest of the cookies. Enjoy!
