When I think of pancakes, I think of weekends, family, holidays and all those sweet moments in between. Nostalgic feelings and happy thoughts.
For my family, pancakes are a special treat. We normally make them on the weekends or on special occasions. Like most people, it's challenging to get out the door on a weekday, much less make a big breakfast before you leave. It's not that I wouldn't make them on a weekday...because I would and I have..it's just not part of my normal routine. The whole point I am trying to make is that pancakes are special and remind me of all the happy things in my life.
Growing up my mom would make us homemade pancakes, never a box mix, not ever! That just wasn't for her. Because of this, I can't ever imagine buying the box stuff..I mean, why?! Making homemade pancakes doesn't have to be daunting...it's really super simple and SO much better. Trust me, guys!
Let's get started!
Start by pureeing your strawberries. Set aside.
Mix together your dry ingredients.
Add in all the wet ingredients, besides the puree. Mix.
Stir in the strawberry puree until just combined.
Turn on your griddle and cook to perfection.

Makes 6-7, 4 inch pancakes
½ cup sliced strawberries, 3 oz
2 tablespoons sugar
1 tsp lemon juice
1 cup flour
1 ½ tsp baking powder
½ tsp baking soda
½ cup buttermilk
3 tablespoons melted butter
1 tsp vanilla
In a food processor, pulse strawberries, sugar and lemon juice until pureed. In a medium bowl combine all dry ingredients. Mix in buttermilk, eggs, melted butter and vanilla. Stir in strawberry puree until just combined. Heat a griddle and pour 1/3 cup batter per pancake. Cook until lightly browned on each side.
