Scones of any flavor, shape or size, i'm all about it! Gimme all the scones, please! Pumpkin is a staple this time of year..so clearly I had to experiment with pumpkin, in scones.....enter these pumpkin scones with a maple glaze! Yep! Scones just happen to be my favorite thing to bake. The flaky texture just gets to me...and topping them with a sweet, thick glaze is icing on the cake. Give these a try!
Pumpkin Scones with a Maple Glaze
Makes 8 Scones
2 ½ cup + 3 tablespoons flour
2 ¼ tsp baking powder
¼ tsp baking soda
3/4 tsp pumpkin pie spice
¼ tsp kosher salt
1/3 cup sugar
½ cup cold butter, cut into 1-inch pieces
1/3 cup + 2 tablespoons pumpkin puree
¼ cup + 3 tablespoons tablespoons heavy cream
1 tsp vanilla
2 tablespoons maple syrup
1 tablespoon milk
¾ cup powdered sugar
Preheat the oven to 375. In a medium size bowl, mix together dry ingredients. Cut in cold butter until the mixture resembles fine crumbs. Add in wet ingredients; mix together with a spoon (I use my hands) until dough comes together. Transfer dough to a lightly floured surface. Shape dough into a ½ inch thick circle. Cut into 8 equal size scones. Place scones on a sheet pan lined with parchment paper. Bake at 375 for 22-25 minutes, until tops are golden.
Make glaze once scones comes out of the oven. Whisk all ingredients together in a small bowl until smooth. Pour over warm scones. Enjoy!
