Tis the season for all things peppermint..
Starting with these homemade peppermint mallows! Yay!
Nothing beats a homemade marshmallow..theres something about the softness, sweetness and the way they melt oh so perfectly in a hot glass of cocoa..which is personally my favorite way to indulge in these beauties.
If your not into that, these are SO good all on their own..whatever floats your boat.
So soft and dreamy..
I mean just look at these marshmallows in hot cocoa..YES, please!
Homemade Peppermint Marshmallows
Makes 1 8x8 pan
2 packets gelatin
½ cup + 1 tablespoon water
1 cup + 2 tablespoons sugar
1/3 cup corn syrup
1 tsp vanilla
1/8 tsp mint extract
6 mini candy canes, crushed + more for sprinkling
Special equipment: candy thermometer
Using a pastry brush, coat pan with vegetable oil. Using a fine mesh sieve, dust generously with powdered sugar. Set aside.
In an electric mixer, fitted with the whisk attachment beat the gelatin and ¼ cup + 1 tablespoon of the water together. Set aside.
In a small saucepan over medium heat, combine remaining ¼ cup water, sugar and corn syrup. Whisk mixture until sugar dissolves and syrup starts to boil. Attach candy thermometer to side of pan. Continue to boil, without stirring until syrup reaches 240 degrees F. Remove from heat. With the mixer on low, pour in syrup immediately and mix until all combined. Increase speed to high and mix for 15 minutes. Mixture will be thick, stiff and white in color. Mix in vanilla extract, mint extract and crushed peppermint until just combined. Transfer marshmallow mixture into pan. Smooth and spread with wet hands. Top with more crushed candy canes. Let marshmallows sit for at least 4 hours until firm. Enjoy!
