Soft, Buttery perfectly sweet scones.
I may have mentioned before, but scones are kinda my thing. Meaning, they are my number 1 favorite thing to bake. That being said, these are my absolute FAVORITE scone to eat and bake! It might have something to do with the colorful sprinkles..which kinda make everything taste better, at least I think so. ;)
Think cake batter..in scone form. YES.

Makes 8 Scones
For the Scones:
2 ½ cup flour
1/3 cup + 2 tablespoons sugar
1/3 cup rainbow sprinkles
2 ¼ tsp baking powder
½ tsp cornstarch
¼ tsp baking soda
¼ tsp kosher salt
½ cup cold butter, cut into cubes
¼ cup + 3 tablespoons heavy cream
¼ cup + 1 tablespoons milk
2 tsp vanilla
For the Glaze:
2 tablespoons milk
1 cup powdered sugar
1 tsp vanilla
Preheat the oven to 375. In a medium bowl, combine dry ingredients. Cut in cold butter until dough resembles fine crumbs. Add cream, milk and vanilla. Stir/use your hand until dough comes together. You don't want your dough to be too wet, so using your hands really helps the dough come together. Transfer dough to a lightly floured surface. Shape into an 8x8 inch circle, 1 ½ inch thickness. Cut into 8 equal sized scones. Bake at 375 for 24-25 minutes until tops are golden.
While scones are baking, make the icing. Using a whisk combine all ingredients until smooth.
Once scones are done baking, let cool for 5 minutes. After 5 minutes of cool time, dip each scone in icing, then add more sprinkles if desired.
