Creamy, honey sweetened ice cream filled with dark chocolate pretzel chunks that melt in your mouth. My favorite combo of salty and sweet. Get on board, guys! You are going to LOVE this!
My dessert of choice will always be ice cream...creamy, cold and perfectly sweet. I'll take ice cream anytime of the year.
Im always experimenting with ice cream. It really is so simple to make and it's always fun to taste the finished product. Homemade ice cream is the way to go.
I wanted to do something salty and sweet..ENTER honey and pretzels...the chocolate is just an added bonus. Because chocolate is a must, ALWAYS!
Using only honey to sweeten this ice cream....there is less guilt...at least thats what I tell myself. ;)
Let's get started!
In a medium bowl, start by beating your egg yolks together. Set aside.
Next in a medium saucepan you want to combine your cream, milk and honey. Transfer to a stovetop set to medium high heat. Whisk until mixture is hot and steamy, about 4-5 minutes.
Next were gonna temper our egg yolks. Pour a ladle full or more of the hot cream mixture into the eggs, making sure to whisk constantly. Pour back into the remaining hot mixture.
Turn the stovetop heat down to medium. This is where you are going to whisk constantly until the mixture thickens, about 5-6 minutes.
Once thickened, remove from heat and whisk in the corn syrup and vanilla.
Transfer to a large bowl and place in the fridge until cool, 1-2 hours or overnight.
It is very important that your ice cream mixture is chilled before churning in the ice cream maker.
Once chilled add to the frozen ice cream bowl, and start churning.
while your ice cream is churning, YAY, melt the chocolate and vegetable oil in the microwave until smooth. Add in pretzel chunks and stir to coat with chocolate.
In the last 1-2 minutes of churning add the chocolate by the tablespoon. This gives you a bunch of chocolate chunks..if you pour it all in at once, it can clump together and then your left with a couple BIG chunks.
Next step is to FREEZE. Transfer to a loaf pan and freeze. Once frozen , ENJOY!
Drizzle on more honey if you so desire..
Dark Chocolate Pretzel Chunk Honey Ice Cream
Makes 1 loaf pan
4 egg yolks
2 cups milk
1 ¼ cup heavy cream
1/2 cup honey
1 tablespoon vanilla
3 tablespoons corn syrup
½ cup dark chocolate chips
1 tsp vegetable oil
1/3 cup pretzels, crushed
In a medium bowl, whisk together egg yolks; set aside.
In a medium saucepan over medium-high heat, combine milk, cream and honey. Stir occasionally until hot, do not boil; about 4-5 minutes.
Pour a ladle full of hot cream mixture into yolks, whisking constantly. Pour into remaining cream mixture.
Over medium heat, whisk constantly until mixture thickens slightly, about 5-6 minutes. Take off heat. Whisk in corn syrup and vanilla.
Transfer to the fridge or do an ice bath. Mixture must be completely cool before making ice cream.
Once ice cream is chilled, pour into frozen ice cream maker and churn until ready, about 20 minutes. Add the melted chocolate pretzel mixture in the last 1-2 minutes. Add chocolate mixture by the tablespoon.
Melt the chocolate while the ice cream is churning. In a small bowl, combine chocolate and vegetable oil. Microwave for 20-30 seconds, remove and whisk until smooth. Stir in pretzel chunks. Set aside until ready to add to the ice cream.
Once the ice cream is done churning, pour into a loaf pan.
Freeze and enjoy!
