Creamy cake batter flavored ice cream, filled with sprinkles and swirled with marshmallow sauce. Literally all my childhood ice cream dreams come true.

A little background for ya…When I was in high school my cousin and I would, every once in while treat ourselves to Cold Stone..which was our favorite place ever. We would always split one and do a create your own. Basically our creation always consisted of CAKE BATTER ice cream and a few mix-ins. Cookie dough, graham cracker crumbs..all that good stuff. Let me tell you, it was GOOD.
Because of this, I associate good memories and happiness with cake batter ice cream. I mean, I just do.
SO…I had to create my own version which is so good all by itself and equally as amazing with the marshmallow swirl mixed in. If marshmallow swirl is not your thing, just skip that step. It is so so good all on its own.
Lets get started…
Cake Batter Marshmallow Swirl Ice Cream
Makes 1 loaf pan
4 egg yolks
2 cups milk
1 ¼ cup heavy cream
1/2 cup sugar
½ cup white cake mix
1 tablespoon vanilla
3 tablespoons corn syrup
1/4 cup colored sprinkles
1/3 cup marshmallow fluff
2 tsp water
In a medium bowl, whisk together egg yolks; set aside.
In a medium saucepan over medium-high heat, combine milk, cream, sugar and vanilla. Stir occasionally until hot, do not boil; about 3 minute and 30 seconds.
Pour a ladle full of hot cream mixture into yolks, whisking constantly. Pour into remaining cream mixture.
Over medium heat, whisk constantly until mixture thickens slightly, about 5-6 minutes. Take off heat. Whisk in corn syrup, vanilla and cake mix.
Transfer to the fridge or do an ice bath. Mixture must be completely cool before making ice cream.
Once ice cream is chilled, pour into frozen ice cream maker and churn until ready, about 20 minutes. Add the sprinkles in the last 1-2 minutes of churning.
Make marshmallow sauce while ice cream is churning. In a small bowl, combine marshmallow fluff and water. Microwave for 15 seconds, remove and whisk until smooth.
Once done, pour half of the ice cream into a loaf pan. Top with half of the marshmallow sauce and swirl. Repeat with the remaining ice cream and marshmallow sauce.
Freeze and enjoy!
