Browned butter oatmeal pumpkin chocolate chip cookies..yep! So many good things in one cookie! Dont be intimidated by the title...these cookies are so good and so easy to make and the brown butter is the star of the show. Soft, chewy and seriously addicting. Lets get baking!
Browned Butter Oatmeal Pumpkin Chocolate Chip Cookies
6.5 tablespoons butter
¾ cup + 2 tablespoons flour
2 tablespoons oats
1/8 tsp baking powder
¼ tsp baking soda
1/4 tsp kosher salt
1/8 tsp pumpkin pie spice
¼ cup + 2 tablespoons brown sugar
2 tablespoons +2 tsp sugar
¼ cup pumpkin puree
1 tsp vanilla
½ cup chocolate chips
Brown the butter. In a small saucepan over medium heat, melt the butter. Stir occasionally to make sure the butter cooks evenly. You will hear a cracking noise, once it stops, turn heat down to low and let sit for another minute, making sure it does not burn. Transfer to a bowl and let cool while you make the cookies.
Preheat the oven to 350. In a small bowl mix together the dry ingredients. Set aside. In the bowl of al electric mixer fitted with the whisk attachment, beat the sugars, browned butter and vanilla together. Add pumpkin and mix well. Beat in dry ingredients until just combined. Fold in chocolate chips. Scoop cookies with a cookie scoop and place on a pan lined with parchment paper, 1-2 inches apart. Bake at 350 for 9-10 minutes, until golden on top. Enjoy!
