Pop tarts literally bring me back to my childhood. It was the best day ever when my mom would come home from the store with pop tarts! I am not one to discriminate on any flavor of pop tart..they were all so good...however, brown sugar was my #1 favorite..hands down! These mini pop tarts are my own version of my favorite childhood treat and they do not disappoint! Flakey, buttery, almond studded crust, filled with a cinnamon brown sugar filling...doesn't get any better. These beauties are so worth the time and effort...THE best!
Brown Sugar Pop Tarts
Makes 17 Circular Pop Tarts
For the Dough:
1 cup cold butter, cut into 1-inch pieces
1/4 tablespoons sugar
2 2/3 cup flour
¼ cup almonds
½ teaspoon almond extract
½ cup cold water
For the filling:
¼ cup 2 tablespoons brown sugar
1 ½ tsp cinnamon
2 tsp flour
3 tsp butter
1 tablespoon milk
½ cup to ¾ cup powdered sugar
1 1/2 tablespoon milk
Start by making the dough. In a food processor, combine all ingredients, except cold water. Pulse until butter and almonds are pulsed to small pieces. Add in cold water, pulse until dough comes together. Remove and set aside in the fridge.
Make the filling. In a small bowl, combine all ingredients. Using a fork mix together until butter resembles fine crumbs.
Preheat the oven to 350. Assemble: On a floured surface, roll out dough to ¼ inch thickness, using a circle cookie cutter, cut as many circles as you can. Roll the remaining dough and repeat until you use all the dough. Take 2 circles and fill one with 1 teaspoon of filling. Top with the other piece of dough. Push down the sides and crimp with a fork. Repeat this step with the rest of the circles. In a small bowl, whisk together the egg and the milk. Using a pastry brush, brush each pop tart with the egg wash. Bake at 350 for 22 minutes until tops are golden.
Make the icing: In a small bowl, combine the powdered sugar and milk until smooth. Pour over poptarts. Enjoy!
